My Chicken Poached in Mediterranean-style Broth

Today we learned how to properly quarter a chicken. I am not the fastest in the kitchen but I am happy to say that i finished that task second today!

I have always been interested in learning how to quarter a chicken and have watched many videos on the matter before I went to culinary school.

I was most inspired by Marco Pierre White’s roasted chicken, that specific dish means so much to me as it was the first dish I completed successfully.
