Chef’s Ginger marinated Pork Fillet with Sweet and Sour Sauce

The Chef made this dish look so easy, but being unexperienced with cooking pork I found it a bit difficult. I wasn’t a fan of the flavor profiles but my partner for the day absolutely loved this dish. To start of with we had to sear the pork fillet on all sides to brown, we then made the sweet and sour sauce using a gastrique (sugar-vinegar mix) to achieve the sweet and sour blend. Chef V then taught us the proper way to slice pork which i didn’t do quite well due to my choice of knife. We paired the pork with our pickled vegetables that we made a few weeks ago, we also added caramelized lime zest and lime suprémes as garnish.
